Season the chicken with salt and pepper.<\/li>\n
In a large skillet, heat 1 tablespoons of oil over medium-high heat and place the chicken drumsticks.<\/li>\n
Sear the chicken until golden brown, about 2 minutes per side.<\/li>\n
Remove the chicken from the skillet and place in the Instant Pot.<\/li>\n
With the same skillet still on medium-high heat, add the remaining 1 tablespoon oil, the onion and saut\u00e9 for about 3 minutes, until the onion becomes golden. Add the garlic, dried rosemary, oregano, and diced tomatoes; stir about 1 min. Pour this mixture over the chicken.<\/li>\n
