Ingredients
  

  • 3 lb ~1350g peeled yukon gold, russet or red potatoes, peeled and cut into large cubes
  • 1/2 cup hot 2% milk
  • 2 Tbsp. 28g butter, room temperature
  • 2 Tbsp. 30g light cream cheese, room temperature
  • Salt and pepper to taste

Instructions
 

  • In a large pot, add the potato cubes, salt (about 1 tsp.), and cover with cold water.
  • Cover with lid and bring to a boil. Reduce the heat to a simmer and cook for 15-20 minutes until the potatoes are fork-tender.
  • Drain the potatoes well and return to the same pot. Add the hot milk, butter (save up some butter for garnish if you want), and cream cheese. Mash with a potato masher until smooth and creamy (it may take some time mashing the potatoes to the desired texture). Season with salt and pepper to taste.
  • Serve warm, garnished with fresh herbs or chives if desired. Enjoy!
