Oven Baked Pesto Chicken

Ingredients
  

  • 3 -4 large boneless chicken breasts or ~ 1½-2 lb (I had 1.8 lb/815g)
  • ¼ cup or 55g store-bought or homemade basil pesto
  • 2-3 Tbsp. lemon juice
  • Salt and pepper to taste

Instructions
 

  • Place chicken in an ovenproof baking dish. Add the pesto, lemon juice, season with salt and pepper.
  • Massage the pesto sauce evenly on each chicken breast on both sides.
  • Optional: 1. Let the chicken marinate for about 15 minutes at room temperature (while preheating your oven).
  • 2. Cover the dish with plastic wrap and put it in the fridge if decided to marinate the chicken breast for more than 30 minutes up to overnight.
  • Preheat the oven to 425°F.
  • Bake the chicken for about 20 to 25 minutes until it’s no longer pink inside or reaches an internal temperature of 165°F.
  • Remove the chicken from the oven and let it rest in the baking dish for 7-10 minutes (this lets the chicken absorb some of the juices).
  • Serve with pesto cooking liquid if desired and enjoy!
