The most flavorful and easy vegetables are made in Air Fryer! These Air Fryer Vegetables and Potatoes are ready in just 30 minutes and are one of my favorite ways to enjoy healthy sides.

Ingredients
  

  • 3 large potatoes or ~1 lb / 450g, cut into 1-inch cubes
  • 1 large bell pepper or 180g, chopped into 1-inch cubes
  • 2 medium red onions or ~160g, chopped into 1-inch cubes
  • 1 tsp. garlic powder
  • 1 tsp. Cajun seasoning or paprika
  • 1 Tbsp. or 7g avocado or olive oil
  • salt and pepper to taste

Instructions
 

  • Preheat the air fryer to 380°F.
  • In a large bowl, combine the vegetables with seasonings, oil, salt, and pepper.
  • Place in the air fryer basket in a single layer, and air fry for 20 minutes shaking halfway through.
  • Serve hot and enjoy!
