Season the chicken with salt and pepper
In a large skillet, heat 1 tablespoons of oil over medium-high heat and place the chicken drumsticks.
Sear the chicken until golden brown, about 2 minutes per side
Remove the chicken from the skillet and place in the Instant Pot.
With the same skillet still on medium-high heat, add the remaining 1 tablespoon oil, the onion and sauté for about 3 minutes, until the onion becomes golden. Add the garlic, dried rosemary, oregano, and diced tomatoes; stir about 1 min. Pour this mixture over the chicken.
Combine water with tomato paste in a small bowl, pour over the drumsticks.
Cook for 25-30 min in the Instant Pot on Poultry program until the chicken is cooked
Serve the drumsticks over pasta, potato, rice or another side dish and enjoy!
