Banana Oatmeal Pancakes

- 1 140 g large ripe banana,
- 2 large eggs
- 3/4 cup 75 g oat flour (blended oats)
- 1 tsp. baking powder
- 1 tsp. 2 g oil (for brushing a skillet)
- maple syrup, Greek yogurt, banana slices or berries, to serve
In a bowl, whisk together the eggs, and mashed banana.
Add the blended oats and baking powder and mix just until combined well.
Preheat a non-stick skillet over a medium-low heat. Pour or scoop the batter onto the griddle and cook for a minute or two each side, until the pancakes are golden brown.
Serve with maple syrup, Greek yogurt, banana slices or/and berries.
