Ingredients for Roasted Sweet Potato Dish

  • 2 large sweet potatoes 2 lb / 920 g, peeled and sliced
  • 2 tbsp. 10 g. olive oil
  • 3 tbsp. 20 g. butter, melted
  • 4 tbsp. Parmesan cheese, grated
  • 1 ½ tsp. garlic powder
  • 1 tsp. dried rosemary
  • ½ tsp. dried thyme
  • salt and pepper to taste

Instructions
 

  • Preheat the oven to 400 °F.
  • Peel the sweet potatoes and cut into thin slices.
  • Place the potato slices into a large bowl, add the olive oil, melted butter, and 3 tbsp Parmesan cheese (leave 1 tbsp. for garnish).
  • Season your sweet potato with garlic powder, rosemary, thyme salt, and pepper. Toss well to combine.
  • Arrange the potato slices in a glass baking dish or casserole.
  • Bake for 50-60 minutes until tender and the top is browned.
  • Garnish with grated Parmesan cheese and enjoy!
