Ingredients for Roasted Sweet Potato Dish
- 2 large sweet potatoes 2 lb / 920 g, peeled and sliced
- 2 tbsp. 10 g. olive oil
- 3 tbsp. 20 g. butter, melted
- 4 tbsp. Parmesan cheese, grated
- 1 ½ tsp. garlic powder
- 1 tsp. dried rosemary
- ½ tsp. dried thyme
- salt and pepper to taste
Preheat the oven to 400 °F.
Peel the sweet potatoes and cut into thin slices.
Place the potato slices into a large bowl, add the olive oil, melted butter, and 3 tbsp Parmesan cheese (leave 1 tbsp. for garnish).
Season your sweet potato with garlic powder, rosemary, thyme salt, and pepper. Toss well to combine.
Arrange the potato slices in a glass baking dish or casserole.
Bake for 50-60 minutes until tender and the top is browned.
Garnish with grated Parmesan cheese and enjoy!
