Ingredients
  

  • 1 ½ cup 240 g whole wheat flour
  • 1/3 cup 75 g butter, melted
  • 1 ½ cup 200 g dry cottage cheese
  • 40 g 85% dark chocolate chopped
  • 5 Tbsp. 55 g erythritol or sweetener of choice (add more if you like sweeter)
  • 1 large egg
  • 1 tsp. baking powder
  • 1/2 tsp. baking soda
  • 1 tsp. vanilla
  • 1/8 tsp. salt

Instructions
 

  • Preheat oven to 350˚ F. Line a baking sheet with parchment paper.
  • In a medium bowl mix together the flour, baking powder, baking soda, and salt.
  • In a large mixing bowl, add the cottage cheese, melted butter, sweetener, egg, and vanilla. With a hand mixer mix together until creamy. (Use a blender if you don’t have a hand mixer).
  • Add the flour and chopped chocolate. Using a spatula or wooden spoon, fold ingredients together until well combined.
  • Roll the dough into balls (make about 12 medium balls) and place onto the lined baking sheet.
  • Flatten the balls slightly with your fingers, then place in the preheated oven for 20-25 minutes, or until lightly golden.
  • Remove from the oven and allow to cool completely.
