Healthy Mashed Potatoes
This Healthy Mashed Potatoes recipe is light, creamy, easy, and the best way to make mashed potatoes. With only a few simple steps, you’ll get ultimate, fluffy mashed potatoes that make a wonderful accompaniment to many main dishes and Thanksgiving or holiday dinners.
- 3 lb ~1350g peeled yukon gold, russet or red potatoes, peeled and cut into large cubes
- 1/2 cup hot 2% milk
- 2 Tbsp. 28g butter, room temperature
- 2 Tbsp. 30g light cream cheese, room temperature
- Salt and pepper to taste
In a large pot, add the potato cubes, salt (about 1 tsp.), and cover with cold water.
Cover with lid and bring to a boil. Reduce the heat to a simmer and cook for 15-20 minutes until the potatoes are fork-tender.
Drain the potatoes well and return to the same pot. Add the hot milk, butter (save up some butter for garnish if you want), and cream cheese. Mash with a potato masher until smooth and creamy (it may take some time mashing the potatoes to the desired texture). Season with salt and pepper to taste.
Serve warm, garnished with fresh herbs or chives if desired. Enjoy!
