For the Meatballs:

  • 2 lb. 900g lean ground pork, 90% lean
  • 1 medium 135g apple, shredded
  • 1 medium 75g yellow onion, shredded or finely chopped
  • 2 garlic cloves minced
  • 1 large egg
  • 1/2 cup 40g panko breadcrumbs
  • 1 tsp. freshly grated ginger or 1/2 tsp. ground ginger
  • 1 tsp. Dijon mustard
  • 1 or 2 tsp. sesame oil
  • salt and pepper to taste

For the Teriyaki Sauce:

  • 2 garlic cloves minced
  • 1 tsp. freshly grated ginger or 1/2 tsp. ground ginger
  • 1/3 cup soy sauce
  • 1/2 to 2/3 cup water
  • 1 tsp. 6g sesame oil
  • 1 Tbsp. 15g honey
  • 1 Tbsp. rice vinegar or lemon/lime juice
  • 1 Tbsp. 8g cornstarch


For the Meatballs:

  • Preheat the oven to 400°F. Line a baking sheet with aluminum foil or parchment paper.
  • In a large bowl, mix the meatball ingredients together using your hands or stand mixer until well-combined.
  • Shape into meatballs and place them onto the prepared baking sheet.
  • Bake the meatballs for 12-15 minutes, or until golden browned and cooked through. Serve immediately or make the sauce.

For the Sauce:

  • In a small saucepan, mix the sauce ingredients together, and simmer for 1-2 minutes, stirring frequently, until slightly thickened.
  • Place the warm meatballs in a mixing bowl, coat with the sauce, and toss to combine.
  • Garnish with sliced green onion and sesame seeds, if desired. Enjoy!
