Healthy Ricotta Blueberry Waffles

Ingredients
  

  • 1 cup 150g whole-wheat flour
  • 1 cup 150g all-purpose flour or wholegrain spelt flour
  • 2 tsp. baking powder
  • 1 tsp. baking soda
  • 1/4 tsp. salt
  • 2 large eggs
  • 1 cup 240g lukewarm milk
  • 3 Tbsp. lemon juice
  • 1 tsp. vanilla extract
  • 1 cup 215g light ricotta
  • 5 Tbsp. 50g unsalted butter, melted
  • 3 Tbsp. erythritol or stevia
  • 1 Tbsp. grated lemon zest
  • 1 or 1 ½ cup 150 - 225g blueberries, fresh or frozen

Instructions
 

  • Preheat a waffle maker to medium heat.
  • In a medium bowl, mix together whole-wheat flour, all-purpose flour, baking powder, baking soda, and salt.
  • In another large mixing bowl, whisk together the eggs, lukewarm milk, lemon juice, vanilla, ricotta, and melted butter.
  • Add the flour mixture to the wet mixture, add the erythritol or stevia, and stir just until the batter is just combined.
  • Fold in the blueberries and lemon zest.
  • Once the waffle iron is heated, spray it with cooking spray if needed. Pour about 1/4 cup of the batter into each well of the waffle plate. Close the lid and cook until the waffles are golden brown and crisp.
  • Serve immediately with favorite toppings and enjoy!
