Grilled Chicken Thighs with Healthy Marinade

  • 8 boneless skinless chicken thighs (about 2 lb/900g)
  • 1 Tbsp. or 7g olive oil
  • 1 Tbsp. or 15g honey
  • 2-3 Tbsp. lemon juice
  • 1 ½ Tbsp. whole grain mustard or any other mustard will work
  • 1 tsp. garlic powder
  • 2 tsp. Italian seasonings
  • salt and pepper to taste


  • Add the chicken thighs to a large mixing bowl or plastic bag. Pour the olive oil, honey, lemon juice, mustard over the chicken and season with garlic powder, Italian seasonings, salt, and pepper. Stir it all to combine.
  • Marinate the chicken at room temperature for 15-20 minutes or place in the fridge if marinate for more than 30 minutes or overnight.
  • Preheat the grill (grill pan, or griddle) for medium-high heat. Grill the chicken thighs for 4-5 minutes per side, or until the chicken thighs have cooked through and the internal temp is 165°F.
  • Let the chicken rest for about 3 minutes and serve warm. Enjoy!
