Traditional Mediterranean Tabbouleh is a refreshing, filling vegetarian salad with herbs and bulgur. This quick and easy one-bowl salad is a delicious, simple lunch or side that is also a perfect make-ahead dish.

Ingredients
  

  • 1/2 cup or 96g wheat bulgur, uncooked
  • 1 cup boiling water
  • 1/4 cup fresh mint leaves
  • 1/2 cup parsley chopped
  • 2-3 green onions
  • 2 medium 270g tomatoes
  • 1 baby cucumber 90g or ½ English cucumber
  • 3 Tbsp. or 21g extra-virgin olive oil
  • 2 Tbsp. fresh lemon juice or to taste
  • ½ tsp. garlic powder
  • salt and pepper to taste

Instructions
 

  • Place the bulgur in a medium salad bowl (ceramic or glass). Add the boiling water, cover, and let sit until the water is absorbed (about 20-30 minutes).
  • Meanwhile, finely chop the herbs, onions, tomatoes, and cucumber. Drain the bulgur and squeeze out any remaining water. Transfer back to the bowl.
  • Add the herbs, onions, chopped tomatoes with cucumber to the bowl with the cooled bulgur.
  • Mix the olive oil, lemon juice, garlic powder, salt, and pepper together in a small bowl. Pour it into the salad and stir. Enjoy!
