Ultimate Breakfast with Simple Pancakes and Poached Eggs

This recipe of Ultimate Breakfast with whole grain pancakes along with poached eggs is delicious, healthy and easy to make. This recipe is perfect for the weekends or holidays, but you can also have it any time making your wholegrain and sugar-free pancakes ahead of time. Just keep them in a fridge up to 3-4 days and toast before serving.

Ingredients for Ultimate Breakfast

  • For the ultimate pancakes:
  • 1 cup 140 g. whole wheat flour
  • 1 cup 225 ml. milk, 2%
  • 1 egg
  • 1 tbsp. 5 g. vegetable oil + 1 tsp. for frying
  • ½ tsp. baking powder
  • pinch of salt

For the poached eggs and serving:

  • 4 eggs, use fresh eggs
  • ½ large 70 g. avocado, cut into cubes or slices
  • cherry tomatoes, optional
  • salt and pepper, to taste

Instructions
 

Make the ultimate pancakes

  • Place the flour, milk, egg and a pinch of salt into a large bowl or blender. Whisk or blend well until smooth.
  • Add the oil and baking powder, whisk to combine.
  • Heat a nonstick frying pan on medium heat and slightly brush with the oil.
  • Pour about 1/2 cup batter onto the frying pan and cook for 1 - 2 minutes, until little bubbles start to show on the top and the bottom is golden brown. Flip the pancake over and cook until golden brown.
  • Put the pancakes in the preheated to 170°F oven to keep them hot before serving.

Poach the eggs

  • Bring a large pot of water to a boil. Reduce the heat to low keeping the water gentle simmer (don/t boil!).
  • Crack each egg into small bowls.
  • Slide the first egg into the simmering water, then after 30 seconds, slide the second egg, and then the next one, and the last one.
  • Poach the eggs for 3 to 5 minutes. Carefully lift the eggs from the pot with a slotted spoon.
  • Serve your breakfast
  • Get your pancakes from the oven and place the poached eggs on top of each pancake.
  • Top with the avocado slices and sprinkle with salt and pepper.
  • Serve with the fresh cherry tomatoes and enjoy!
