Homemade Chicken Sausages

- 1 lb 455 chicken breast, skinless, boneless
- ½ lb 230g chicken drumsticks, skinless, boneless
- 50-60 ml. ice cold water
- 1 tsp. garlic powder
- ½ tsp. oregano
- ½ tsp. thyme or/and coriander
- ¼ tsp. ground black pepper
- 1 tsp. salt or to taste
- 40-60 inch. hog natural casings
Rinse the casing well outside and inside with warm water.
Cut the chicken breast and drumsticks into a small ½ inch. pieces and place the meat in a large bowl.
Season with all spices, add water and mix well by your hands about 1-2 minutes.
Using a sausage stuffer, or just sausage stuffing tube fill the meat into hog casings and twist into small links.
These sausages can be baked in the oven or grilled on any grill.
For baking, preheat the oven to 375˚F.
Place the sausages on a baking pan lined with parchment paper and bake for about 35-40 min. until it’s no longer pink in the middle or until the internal temperature reaches 160˚F.
Then put the sausages under the broiler to brown.
