  • 1 lb 455 chicken breast, skinless, boneless
  • ½ lb 230g chicken drumsticks, skinless, boneless
  • 50-60 ml. ice cold water
  • 1 tsp. garlic powder
  • ½ tsp. oregano
  • ½ tsp. thyme or/and coriander
  • ¼ tsp. ground black pepper
  • 1 tsp. salt or to taste
  • 40-60 inch. hog natural casings


  • Rinse the casing well outside and inside with warm water.
  • Cut the chicken breast and drumsticks into a small ½ inch. pieces and place the meat in a large bowl.
  • Season with all spices, add water and mix well by your hands about 1-2 minutes.
  • Using a sausage stuffer, or just sausage stuffing tube fill the meat into hog casings and twist into small links.
  • These sausages can be baked in the oven or grilled on any grill.
  • For baking, preheat the oven to 375˚F.
  • Place the sausages on a baking pan lined with parchment paper and bake for about 35-40 min. until it’s no longer pink in the middle or until the internal temperature reaches 160˚F.
  • Then put the sausages under the broiler to brown.
  • Serve hot and enjoy!
