Healthy Baked Chicken Nuggets
This Baked Chicken Nuggets recipe is for all family members – from the kids to your grandma! All of them will love these goodies. The nuggets have crisp crunch outside and tender texture inside. They are baked in the oven without adding fat, high in protein and low carbs, absolutely healthy, and so delicious! These are perfect for your snack on the go or even high protein lunch.
- 2 medium 450 g. boneless, skinless chicken breasts
- 1/3 cup cold water
- 1 tsp garlic powder
- salt and pepper to taste
- ½ cup 55 g. crushed corn flakes
- 3 tbsp. 30 g. grated parmesan cheese
Preheat the oven to 375˚Line a baking sheet with parchment paper.
Mix the crushed corn flakes and grated parmesan in a medium bowl. Set aside.
Cut the chicken breast into small pieces and place in the bowl of the food processor.
Add the garlic powder, salt, pepper and water. Pulse until the chicken is finely chopped.
Scoop about one tablespoon of the chicken mixture and make small nuggets with your wet hands.
One at a time, roll the nuggets in the cornflakes mixture to coat evenly.
Place the nuggets on prepared baking sheet and bake for 15-20 minutes until the nuggets cooked through, flipping halfway through.
Serve with sauce, if desired and enjoy!
