Mashed Potatoes and Cauliflower

Ingredients
  

  • 2.5 lb (1.1 kg) Yukon Gold potatoes (2 lb/950 g peeled)
  • 1 lb (450 g) cauliflower florets
  • 3 -5 garlic cloves
  • 1 tsp olive oil
  • 2 tbsp (22 g) butter (+ 1 tbsp for topping, optional)
  • 3 tbsp (30 g) light cream cheese
  • 1/3 cup (100 g) warm milk (or reserved potato/cauliflower cooking liquid)
  • Salt to taste
  • Green onions for garnish

Instructions
 

  • Peel and chop the potatoes into even-sized pieces.
  • Place potatoes and cauliflower florets in a large pot and cover with cold water.
  • Bring to a boil, then reduce heat to a simmer. Cook for 15–20 minutes, or until both potatoes and cauliflower are fork-tender.
  • Meanwhile, preheat your air fryer or oven to 350°F (180°C).
  • Place garlic cloves on a small piece of foil, drizzle with 1 tsp. of olive oil, and wrap tightly. Air-fry the garlic or broil (on top rack in the oven) for 8–10 minutes, or until golden brown and soft. Set aside.
  • Once the potatoes and cauliflower are cooked through, drain the vegetables, reserving about 1/3 cup of the cooking liquid.
  • Add 2 tbsp. butter, cream cheese, and roasted garlic. Mash using a potato masher or a hand mixer. Gradually add warm milk (or reserved cooking liquid) while mashing, until you achieve your desired creamy consistency. Season with salt to taste.
  • Spoon the mashed mixture into a serving dish. If desired, add a pat of butter on top for extra richness. Garnish with chopped green onions for a fresh pop of flavor. Enjoy!
