Instant Pot Sweet Potato Soup
A warm bowl of creamy Sweet Potato Soup is everything you need for a comforting and relaxing evening. Made in Instant Pot this quick dinner can be served in 20 minutes!
- 1 Tbsp. 7g olive oil
- 1 medium 80g onion, chopped
- 2 garlic cloves minced
- 2 large 1 ½ lb/680g sweet potatoes, peeled and cut into chunks
- 2 cups 470 mL low-sodium vegetable broth
- 1/4 tsp. ground ginger
- 1/4 tsp. ground nutmeg
- 1/2 tsp. ground cinnamon
- 1/4 tsp. chili flakes or powder
- 1/2 tsp. Italian seasoning
- salt and ground pepper to taste
Turn the Instant Pot on to the Sauté setting. Heat the oil and add the chopped onion and cook, stirring occasionally, until golden brown. Add the minced garlic and cook about 30 sec.
Add the sweet potatoes, vegetable broth, seasonings, salt, and pepper. Close the lid on the Instant Pot and lock. Press the “Soup” button and set the time 10 minutes.
When the cooking cycle has finished, carefully do a quick pressure release. Blend the soup until smooth with an immersion blender, or using a traditional blender.
Serve hot sprinkled with fresh parsley or any toppings you desire and enjoy!
