- 5 salmon fillets 770g / 27oz / 1.7 lb
- 2 tbsp. 10g olive oil
- 2 tbsp. 15g butter
- 1 onion diced
- 3-4 cloves garlic diced
- 1 cup water
- 60 g 2oz Parmesan cheese, grated
- 1 cup half and half
- Salt and pepper to taste
- 1 tbsp. fresh parsley chopped (I also used dried veggie mix) for garnish
Season the salmon filets on both sides with salt and pepper.
Heat the oil in a large skillet over medium heat.
Place the salmon fillets and sear in the hot pan for about 2-3 minutes on each side. Remove from the skillet and set aside.
Add the butter, onion, and garlic to the same skillet. Cook until the onion has softened, about 3-5 minutes.
Pour in half and half, water and bring to a simmer. Season with salt and pepper to your taste.
Reduce heat to low and add the Parmesan cheese. Cook until sauce slightly thickens and until cheese melts through the sauce.
Bring the salmon back into the pan and cook additional 5 min. after boiling.
Garnish with the parsley and enjoy!
