Pat the pork tenderloins dry with paper towels. Drizzle with 2 Tbsp. olive oil and rub evenly.
Sprinkle with smoked paprika, black pepper, and salt, coating all sides.
Cut off the top of the garlic head to expose the cloves.
Place it on a piece of foil and drizzle with 1 tsp. olive oil. Wrap loosely.
Preheat the air fryer to 375°F (190°C).
Place the pork tenderloins and wrapped garlic in the air fryer basket. Air fry for 12 - 15 minutes.
Remove the pork and let it rest. If the garlic isn't soft and golden, air fry it for 7-10 minutes more until tender.
Squeeze the roasted garlic cloves out of their skins into a small bowl.
Add Dijon or honey mustard and a pinch of salt. Mash together with fork into a smooth paste.
Return the pork to the air fryer and cook for another 12-15 minutes at 375°F (190°C), or until the internal temperature reaches 145°F (63°C).
Let the pork tenderloins rest for 5-10 minutes before slicing. Serve warm with your favorite side dishes.
