Healthy Cucumber Salad with Light Dressing
Light, creamy, and refreshing, this Healthy Cucumber Salad is made with Greek yogurt, fresh dill, and everything bagel seasoning. A low-calorie salad perfect for summer meals, BBQs, or a light side dish!

- 1 lg (375g) English cucumber or 4-5 small ones
- 1/2 small (45g) red onion, thinly sliced
- 3 Tbsp. chopped fresh dill
- ½ cup (125g) plain Greek yogurt
- ¼ cup (45g) light mayo
- 1 Tbsp. fresh lemon juice
- 1 Tbsp. whole grain mustard
- 1 tsp. garlic powder
- 2 Tbsp. everything bagel seasoning divided
- salt and pepper to taste
Slice the cucumber into thin rounds or half-moons, depending on your preference. Place in a large mixing bowl.
Thinly slice the red onion and add it to the cucumber along with the chopped fresh dill.
In a separate small bowl, whisk together the Greek yogurt, light mayo, lemon juice, whole grain mustard, garlic powder, 1 tablespoon of the everything bagel seasoning, and a pinch of salt and pepper. Adjust the lemon juice to taste if you like it tangier.
Pour the dressing over the cucumber and onion mixture. Gently toss everything together until well-coated.
Taste and adjust the seasoning with extra salt, pepper, or lemon juice if needed. Sprinkle the remaining tablespoon of everything bagel seasoning over the top for extra crunch and flavor.
Serve immediately, or if making ahead, refrigerate the cucumber-onion mixture and the dressing separately for up to 3–4 hours. Toss everything together just before serving. Enjoy!
