Healthy Ricotta Blueberry Waffles

- 1 cup 150g whole-wheat flour
- 1 cup 150g all-purpose flour or wholegrain spelt flour
- 2 tsp. baking powder
- 1 tsp. baking soda
- 1/4 tsp. salt
- 2 large eggs
- 1 cup 240g lukewarm milk
- 3 Tbsp. lemon juice
- 1 tsp. vanilla extract
- 1 cup 215g light ricotta
- 5 Tbsp. 50g unsalted butter, melted
- 3 Tbsp. erythritol or stevia
- 1 Tbsp. grated lemon zest
- 1 or 1 ½ cup 150 - 225g blueberries, fresh or frozen
Preheat a waffle maker to medium heat.
In a medium bowl, mix together whole-wheat flour, all-purpose flour, baking powder, baking soda, and salt.
In another large mixing bowl, whisk together the eggs, lukewarm milk, lemon juice, vanilla, ricotta, and melted butter.
Add the flour mixture to the wet mixture, add the erythritol or stevia, and stir just until the batter is just combined.
Fold in the blueberries and lemon zest.
Once the waffle iron is heated, spray it with cooking spray if needed. Pour about 1/4 cup of the batter into each well of the waffle plate. Close the lid and cook until the waffles are golden brown and crisp.
Serve immediately with favorite toppings and enjoy!
