Healthy Ricotta Blueberry Waffles Recipe
This Healthy Ricotta Blueberry Waffles is really quick and easy recipe with a step-by-step photo guide. You don’t have to wait for a weekend morning to make this nutritious breakfast as it requires very little time!
These are a lighter variation to the classic waffles. For this recipe, I used a 50:50 ratio of whole wheat flour and all-purpose flour to get more dietary fiber and complex carbohydrates. I got very similar results as baking with all-purpose flour but slightly nutty flavor. You could also use whole wheat flour or wholegrain spelt flour if you prefer.
This waffle recipe includes light ricotta cheese for a little extra protein and richer flavor with less fats. As well I folded blueberries into the waffle batter, which are super high in nutrients and antioxidants. The combination of creamy ricotta, zesty lemon, and juicy blueberries makes the best waffles you can dream about!

Ingredients for Healthy Ricotta Blueberry Waffles
- 1 cup (150g) whole-wheat flour
- 1 cup (150g) all-purpose flour or wholegrain spelt flour
- 2 tsp. baking powder
- 1 tsp. baking soda
- 1/4 tsp. salt
- 2 large eggs
- 1 cup (240g) lukewarm milk
- lemon juice
- 1 tsp. vanilla extract
- 1 cup (215g) light ricotta
- 5 Tbsp. (50g) unsalted butter, melted
- 3 Tbsp. erythritol or stevia
- 1 Tbsp. grated lemon zest
- 1 or 1 ½ cup (150 – 225g) blueberries, fresh or frozen
How to Make Healthy Ricotta Blueberry Waffles
- Preheat a waffle maker to medium heat.
- In a medium bowl, mix together whole-wheat flour, all-purpose flour, baking powder, baking soda, and salt.
- In another large mixing bowl, whisk together the eggs, lukewarm milk, lemon juice, vanilla, ricotta, and melted butter.
- Add the flour mixture to the wet mixture, add the erythritol or stevia, and stir just until the batter is just combined.
- Fold in the blueberries and lemon zest.
- Once the waffle iron is heated, spray it with cooking spray if needed. Pour about 1/4 cup of the batter into each well of the waffle plate. Close the lid and cook until the waffles are golden brown and crisp.
- Serve immediately with favorite toppings and enjoy!
