Quick Sourdough Bread in Bread Machine
Quick and easy Sourdough Bread in a bread machine! This recipe uses sourdough starter, whole wheat flour, and toasted seeds. Perfect homemade sourdough in about 4 hours and no kneading required!

- 1 ½ cup (300g) active sourdough starter (*see the tips below)
- 1 cup (230g) lukewarm water
- 1 tsp. (4g) active dry yeast or instant yeast
- 3 Tbsp. (21g) vegetable or olive oil
- 1 ½ cup (210g) all-purpose flour
- 1 cup (140g) whole wheat flour
- 1 ½ tsp. (9g) salt
Add-ins:
- 3 Tbsp. (24g) flaxseeds
- 3 Tbsp. (21g) sesame seeds
In the bread machine pan, add the sourdough starter, lukewarm water, yeast, and oil. Stir well with a spoon or spatula until mostly smooth and combined.
Add the all-purpose flour and whole wheat flour. Sprinkle salt on top of the flour. Do not mix by hand; the machine will handle that.
Select the French Bread or long-cycle (at least 3.5 hrs) program. Let the machine begin mixing the dough.
While the dough is mixing, toast sesame seeds and flaxseeds in a dry skillet on medium-low heat until golden and fragrant (about 4–5 minutes). Transfer to a plate to cool for 5–7 minutes.
Once the seeds are not hot, add them to the dough during the kneading cycle (or after the first knead cycle). Let the machine incorporate them fully.
Allow the bread machine to continue through the rise cycle.
About 5–10 minutes before baking begins, open the lid and check the dough:If the dough has nearly risen to the pan height (or about 1 inch from the top), let the machine proceed to bake.If not, press STOP/PAUSE (if your machine has it) and allow the dough to rise for an additional 15 minutes. You may need to pause 1–3 times, depending on the dough and room temperature.If your machine doesn’t have a STOP/PAUSE function, stop the program after kneading and rising, let the dough continue rising manually, and later select the BAKE setting to bake for 1hr 30min – 1hr 40min, until golden and crisp. Once baked, carefully remove the bread and cool on a wire rack for about 1 hour before slicing.
Tips:
- Make the active sourdough starter the night before. In a jar, mix 50 grams (1/4 cup) of sourdough starter with 125 (1/2 cup) grams of water and 125 grams (3/4 cup) of all-purpose flour. Stir until combined, loosely cover the jar and let the starter rise at room temperature for 10-14 hours until active and bubbly.
