One Pan Healthy Strawberry Dessert

This One-Pan Strawberry Dessert is my favorite way to enjoy strawberries all year round! Sweet and juicy strawberries baked under a crust layer create a healthy dessert you'll ever eat. It’s an awesome recipe to use up strawberries and so easy to make!

Strawberry Filling:

  • 2 ½ cups or 375g fresh strawberries
  • ¼ cup or 45 g erythritol or another sweetener

Cake Layer:

  • ¼ cup or 40g all-purpose flour or white whole wheat flour
  • 1/3 cup or 40g almond flour
  • 1 tsp. baking powder
  • 1/8 tsp. salt
  • 2 large eggs
  • ¼ cup or 45g erythritol
  • ¼ cup or 50g milk (any kind)
  • 1 Tbsp. or 8g light olive oil or vegetable oil (I used sunflower oil)
  • 1 tsp. vanilla extract


  • In an 8-inch baking dish, toss the strawberries with erythritol. Press down the strawberries with a fork to release some of the juice. Set aside.

Cake Layer:

  • Preheat the oven to 350°F.
  • In a medium bowl, whisk the all-purpose flour, almond flour, baking powder, and salt. Set aside.
  • In a mixing bowl, using a hand mixer, or stand mixer, beat together the eggs with erythritol on high speed until light in color and thick, about 5 minutes.
  • Add the milk, oil, and vanilla extract and beat on low speed until combined.
  • Add half of the flour mixture to the batter; mix with a spatula just until incorporated. Add remaining half of the flour and mix until well combined. Do not over-mix.
  • Pour the batter over the strawberries in the baking dish. Place in the oven and bake for 30 to 35 minutes, or until the top is golden brown.
  • Serve the strawberry dessert warm or at room temperature. Enjoy!
