Ingredients for Healthy Strawberry Dessert
Strawberry Filling:
- 2 ½ cups (or 375g) fresh strawberries
- ¼ cup (or 45 g) erythritol or another sweetener
Cake Layer:
- ¼ cup (or 40g) all-purpose flour or white whole wheat flour
- 1/3 cup (or 40g) almond flour
- 1 tsp. baking powder
- 1/8 tsp. salt
- 2 large eggs
- ¼ cup (or 45g) erythritol
- ¼ cup (or 50g) milk (any kind)
- 1 Tbsp. (or 8g) light olive oil or vegetable oil (I used sunflower oil)
- 1 tsp. vanilla extract
How to Make Strawberry Dessert?
Strawberry Filling:
- In an 8-inch baking dish, toss the strawberries with erythritol. Press down the strawberries with a fork to release some of the juice. Set aside.
Cake Layer:
- Preheat the oven to 350°F.
- In a medium bowl, whisk the all-purpose flour, almond flour, baking powder, and salt. Set aside.
- In a mixing bowl, using a hand mixer, or stand mixer, beat together the eggs with erythritol on high speed until light in color and thick, about 5 minutes.
- Add the milk, oil, and vanilla extract and beat on low speed until combined.
- Add half of the flour mixture to the batter; mix with a spatula just until incorporated. Add remaining half of the flour and mix until well combined. Do not over-mix.
- Pour the batter over the strawberries in the baking dish. Place in the oven and bake for 30 to 35 minutes, or until the top is golden brown.
- Serve the strawberry dessert warm or at room temperature. Enjoy!
