This is an amazing galette recipe with a healthy, rich crust and mildly sweet filling of fresh cherries.
The pie crust in this Healthy Cherry Galette is all about the flavor, texture, and health benefits. It is composed of whole wheat flour, oat flour, some olive oil, and sweetened with a bit of maple syrup.
Olive oil lends the crust irresistible flakiness and such an old-fashioned flavor. One more thing is that olive oil for sure makes the pie crust lighter, dairy-free, and saturated fat-free.
The dough is less elastic in this recipe than typical pie dough, but you can mend cracks by pinching it back together. However, it’s still easy to work with when you place the dough on a sheet of parchment paper to roll it out.
For the cherry filling, I kept it sugar-free because the cherries are sweet and flavorful on their own.
Feel free to make this galette with whatever fruits or berries you have on hand – apples, pears, peaches, ripe apricots, plums, strawberries, or blueberries… You can really fill the galette with anything, sweet or even savory.
For me, it’s better to eat a slice while it’s still warm with some ice cream or Greek yogurt.
How to Store Leftover Galette
This recipe makes just the right size for 6 persons, but it also keeps well for leftovers stored in an airtight container at room temperature. If you desire to enjoy it warm, you could reheat the galette at 325°F until warmed through.

Ingredients for Healthy Cherry Galette
For the Galette Crust:
- 1 cup (150g) whole wheat flour
- 1 cup (120g) oat flour (or blended oats)
- 1 tsp. baking powder
- 1/4 tsp. salt
- 1/3 cup (80ml/75g) olive oil
- 1 Tbsp. (15g) maple syrup
- 5-6 Tbsp. (50-60 ml) cold water
For the Galette Filling:
- 1 lb (445 g) sweet cherries (375g pitted)
- 1 Tbsp. (5g) corn starch (optional)
How to Make Healthy Cherry Galette
- Preheat the oven to 375°F.
- In a medium mixing bowl, whisk together the whole wheat flour, oat flour, baking powder, and salt. Then add the olive oil and maple syrup and mix until it’s crumbly. Gradually stir in cold water until the mixture is moistened and forms a dough. Place the dough onto a work surface, and shape it into a disk.
- On a sheet of parchment paper, roll the dough into a 12-14-inch circle.
- In a bowl, combine the pitted cherries and cornstarch and toss to coat the cherries.
- Arrange the cherries over the dough, leaving about a 2-inch border. Fold and slightly press the dough edges over the filling.
- Transfer the cherry galette onto a baking sheet and bake for about 40 minutes or until the crust is golden brown.
- Remove from the oven and let it cool for about 15 minutes before serving. Enjoy!
