  • 3 lb (600 g.) dry curd cottage cheese, low-fat
  • ½ cup (120 g.) sour cream, 14%
  • 3 large eggs
  • 6 tbsp. (60 g.) wheat semolina (or all purpose flour)
  • 3 tbsp. (12.) cornstarch
  • 3 tbsp. (35 g.) stevia
  • 2 tsp. baking powder
  • ½ tsp. baking soda
  • 1 tsp. vanilla extract
  • ¼ cup (35 g.) dried cranberries or raisins

How to Make Cottage Cheesecake

  1. Preheat the oven to 320˚F.
  2. Line the bottom and edges of an 8-inch (20 cm) diameter cake pan with parchment paper.

  3. In a large mixing bowl, mix together the cottage cheese, eggs, stevia, and vanilla extract using a hand blender (or any blender will work) until smooth.

  4. Add the sour cream and blend to combine well.

  5. Add the wheat semolina, cornstarch, baking powder, baking soda, and dried cranberries or raisins. Combine all together with a spatula.

  6. Pour the mixture into the prepared pan and bake for 40 minutes. Then turn the oven off and leave the cake in for 15 minutes with the oven door slightly opened (about 5-7 inch.).

  7. Transfer the cheesecake from the oven and leave in the pan for 15 minutes at room temperature.

  8. Lift the cheesecake out of the pan, and transfer onto a plate or stand.
