Ingredients for Healthy Winter Loaf Cake

  • 2 cups (250 g.) rye flour
  • 1 ½ cup (250 g.) whole wheat flour
  • 1 cup (100 g.) prunes, chopped
  • ½ cup (75 g.) raisins
  • ½ cup (75 g.) dried cranberries
  • 1/2 cup (115 g.) unsalted butter, melted (use 150 g. butter if you’re not watching calories)
  • 5 large eggs
  • 1/3 cup (65 g.) stevia (or 100-120 g. coconut sugar if you’re not watching calories)
  • 1/3 cup (100 g.) honey
  • 2 tsp. ground cinnamon
  • 3 tsp. tsp ground ginger
  • 1/4 tsp ground nutmeg
  • 1/4 tsp ground cloves
  • 2 tsp. (8 g.) baking powder
  • 1 ½ tsp. (8 g.) baking soda

How to Make Healthy Winter Loaf Cake

  1. In a small saucepan combine honey with ground cinnamon, ginger, nutmeg, and and cloves. Bring to a boil on medium heat. Remove from the heat and set aside to cool.

  2. Preheat the oven to 350°F.
  3. Grease a 9″ x 5″ loaf pan or line with parchment paper.

  4. In a large mixing bowl, using an electric mixer beat together the eggs with stevia on high speed for 7-10 minutes until thick.

  5. Add spiced honey and beat on low to combine.
  6. Pour the melted butter into the egg mixture and stir until well combined.

  7. In another large bowl, whisk rye flour, whole wheat flour, baking powder, and baking soda together.
  8. Mix half of the flour mixture into the egg mixture. When just combined, mix in the remaining flour, prunes, raisins, and dried cranberries; mix thoroughly.
  9. Transfer the batter to the prepared pan and bake for 50-60 minutes until a toothpick inserted in the center comes out clean.

  10. Remove the cake from the oven and let cool for 10 minutes in a pan and then transfer onto a wire rack and cool completely.
