They are high protein, low carb, gluten and dairy free. Soft and puffy and chocolate-flavored – these are one of the BEST healthy cookies I’ve ever made! And I highly recommend them to you!

Ingredients:

  • 1 large banana (135g)
  • 1 tbsp. peanut butter (25g)
  • 1 scoop (32g) chocolate or vanilla protein powder (I used Soy Isolate Protein Powder)
  • 2 tbsp. unsweetened cocoa powder
  • 4 tbsp. (30g) oat flour (I ground whole grain oats)
  • 1 large egg
  • baking powder
  • stevia or 0 cal. sweetener, to taste

Directions:

  1. Preheat the oven to 355 F.
  2. In a large bowl mash the banana, add the egg, protein powder, oat flour, baking soda, peanut butter, cocoa powder and sweetener. Mix well.
  3. Cover a baking sheet with parchment paper.
  4. Using a spoon, divide mixture into 8 cookies and place on a cookie sheet.
  5. Put in the oven and bake for 15-20 minutes.
  6. Let cool for 5-10 minutes before eating. Enjoy!
