Instant Pot Chicken Drumsticks in Tomato Sauce

Ingredients:
- 10 (1340 g / 3 lb) skin on chicken drumsticks
- 2 (10 g) tbsp. olive oil, divide
- 1 (150 g) medium onion
- 2 (10 g) cloves garlic, minced
- 2 (160 g) medium tomatoes, diced
- 100 ml. water
- 1 (30 g) tbsp. tomato paste
- 1½ tsp. salt
- 1/2 tsp. ground black pepper
- 1/2 tsp. dried rosemary
- 1/2 tsp. dried oregano
Directions:
- Season the chicken with salt and pepper.
- In a large skillet, heat 1 tablespoons of oil over medium-high heat and place the chicken drumsticks.
- Sear the chicken until golden brown, about 2 minutes per side.
- Remove the chicken from the skillet and place in the Instant Pot.
- With the same skillet still on medium-high heat, add the remaining 1 tablespoon oil, the onion and sauté for about 3 minutes, until the onion becomes golden. Add the garlic, dried rosemary, oregano, and diced tomatoes; stir about 1 min. Pour this mixture over the chicken.
- Combine water with tomato paste in a small bowl, pour over the drumsticks.
- Cook for 25-30 min in the Instant Pot on Poultry program until the chicken is cooked through.
- Serve the drumsticks over pasta, potato, rice or another side dish and enjoy!
