How to Make Healthier Cookies

These cookies are made from whole wheat flour, but you can easily substitute it to any other flour including gluten-free. You could totally add in some nuts or/and dried fruits, or leave them only with dark chocolate as I have. Semi-sweet chocolate chips work fine but for me is better to use high-quality dark chocolate with a cocoa solids content of 85% and above.

For more flavor, I recommend adding a teaspoon of lemon zest if you have it on hand.

Ingredients for Healthy Chocolate Chunk Cookies

  • 1 ½ cup (240 g) whole wheat flour
  • 1/3 cup (75 g) butter, melted
  • 1 ½ cup (200 g) dry cottage cheese
  • 1/3 cup (40 g) 85% dark chocolate, chopped
  • 5 Tbsp. (55 g) erythritol or sweetener of choice (add more if you like sweeter)
  • 1 large egg
  • 1 tsp. baking powder
  • 1/2 tsp. baking soda
  • 1 tsp. vanilla

How to Make Healthy Chocolate Chunk Cookies

  1. Preheat oven to 350˚ F. Line a baking sheet with parchment paper.
