Ingredients for Healthy Brownies

  • 1/2 cup (60g) oat four (blended oats)
  • 1/2 cup (50g) unsweetened cocoa powder
  • ¼ tsp. salt
  • ½ tsp. baking powder
  • ½ tsp. baking soda
  • 1 dark chocolate bar 72-74% (100g or 1 cup), chopped and divided
  • 2 Tbsp. (30g) butter, melted
  • 2 large eggs
  • 1/2 cup (105g) erythritol (stevia or any sweetener will work)
  • 1 cup (240g) plain Greek yogurt, 2%

How to Make Healthy Brownies

  1. Preheat the oven to 350°F. Line an 8 x 8 baking pan with parchment paper.

  3. In a microwave-safe bowl, add about ¾ cup or 75g chopped chocolate and butter. Microwave on low in 15-second increments, stirring after each one, until melted and smooth.
