Ingredients for Homemade Chicken Sausages
- 1 lb (455) chicken breast, skinless, boneless
- ½ lb (230 g) chicken drumsticks, skinless, boneless
- 50-60 ml. ice cold water
- 1 tsp. garlic powder
- ½ tsp. oregano
- ½ tsp. thyme or/and coriander
- ¼ tsp. ground black pepper
- 1 tsp. salt or to taste
- 40-60 inch. hog natural casings
How to Make Chicken Sausages
- Rinse the casing well outside and inside with warm water.
- Cut the chicken breast and drumsticks into a small ½ inch. pieces and place the meat in a large bowl.
- Season with all spices, add water and mix well by your hands about 1-2 minutes.
- Using a sausage stuffer, or just sausage stuffing tube fill the meat into hog casings and twist into small links.
- These sausages can be baked in the oven or grilled on any grill.
- For baking, preheat the oven to 375˚F.
- Place the sausages on a baking pan lined with parchment paper and bake for about 35-40 min. until it’s no longer pink in the middle or until the internal temperature reaches 160˚F.
- Then put the sausages under the broiler to brown.
- Serve hot and enjoy!
