This Chicken Sausage recipe is keto-friendly, high in protein and low in fat, very nutritious and enjoying for those who are on a diet. And the recipe is actually very easy to prepare. All you need is just cut and mix your poultry, sprinkle with spices, stuff the casings, bake and enjoy! These sausages are great for lunch or dinner and are absolutely perfect for grilling or baking.

Ingredients for Homemade Chicken Sausages

  • 1 lb (455) chicken breast, skinless, boneless
  • ½ lb (230 g) chicken drumsticks, skinless, boneless
  • 50-60 ml. ice cold water
  • 1 tsp. garlic powder
  • ½ tsp. oregano
  • ½ tsp. thyme or/and coriander
  • ¼ tsp. ground black pepper
  • 1 tsp. salt or to taste
  • 40-60 inch. hog natural casings

How to Make Chicken Sausages

  1. Rinse the casing well outside and inside with warm water.
  2. Cut the chicken breast and drumsticks into a small ½ inch. pieces and place the meat in a large bowl.
  3. Season with all spices, add water and mix well by your hands about 1-2 minutes.
  4. Using a sausage stuffer, or just sausage stuffing tube fill the meat into hog casings and twist into small links.
  5. These sausages can be baked in the oven or grilled on any grill.
  6. For baking, preheat the oven to 375˚F.
  7. Place the sausages on a baking pan lined with parchment paper and bake for about 35-40 min. until it’s no longer pink in the middle or until the internal temperature reaches 160˚F.
  8. Then put the sausages under the broiler to brown.
  9. Serve hot and enjoy!
