  • 1 ½ c. (190 g) rolled oats
  • 3 tbsp. (25 g) stevia
  • ¼ c. (40 g) dried cranberries
  • 1 tsp. baking powder
  • ½ c.(80 g) unsweetened applesauce
  • 1 large egg
  • 1/2 c. (125 ml) milk, 2%
  • 1 tsp. vanilla extract

How to Make Healthy Cranberry Oatmeal Muffins

  1. Preheat the oven to 375°F.
  2. Spray a muffin tin with non-stick spray or line with muffin pan liners.
  3. In a mixing bowl combine the oats, stevia, cranberries, and baking powder.
  4. In another bowl combine the applesauce, eggs, milk, and vanilla; blend well.
  5. Add the wet ingredients to the dry ingredients, mixing gently until just combined.
  6. With a scoop or spoon fill each muffin tin 3/4 of the way.
  7. Bake for about 25 -30 minutes or until tops are golden.
  8. Serve and enjoy!
