- 1 ½ c. (190 g) rolled oats
- 3 tbsp. (25 g) stevia
- ¼ c. (40 g) dried cranberries
- 1 tsp. baking powder
- ½ c.(80 g) unsweetened applesauce
- 1 large egg
- 1/2 c. (125 ml) milk, 2%
- 1 tsp. vanilla extract

How to Make Healthy Cranberry Oatmeal Muffins
- Preheat the oven to 375°F.
- Spray a muffin tin with non-stick spray or line with muffin pan liners.
- In a mixing bowl combine the oats, stevia, cranberries, and baking powder.
- In another bowl combine the applesauce, eggs, milk, and vanilla; blend well.
- Add the wet ingredients to the dry ingredients, mixing gently until just combined.
- With a scoop or spoon fill each muffin tin 3/4 of the way.
- Bake for about 25 -30 minutes or until tops are golden.
