Ingredients for Apple Berry Baked Oatmeal
- 1 cup (110 g) rolled oats (old-fashioned preferred)
- ¼ cup (40 g) chopped almonds
- 3 (25 g) flaxseeds
- 2 Tbsp. (15 g) chia seeds
- 4 Tbsp. (45 g) erythritol
- ¼ – ½ tsp. cinnamon
- 1 tsp. baking powder
- ¼ tsp. salt
- 1 egg
- ¼ stick (30 g) butter (melted)
- 1 cup (240 g) almond milk, unsweetened
- 1 cup (150g) blueberries
- 1 cup (130 g) raspberries
- 1 large apple, 150 g chopped
How to Make Apple Berry Baked Oatmeal
- Preheat the oven to 375°F. Grease an 8×8 baking dish or a 9-inch pie dish with butter or cooking oil spray.
- In a mixing bowl, combine the oats, almonds, chia and flax seeds, erythritol, cinnamon, baking powder, and salt.
- In a separate bowl, whisk together the egg, melted butter, and almond milk.
- Pour the liquid mixture over the oat mixture. Stir to combine.
- Arrange about 2/3 of the berries and chopped apples on the bottom of the prepared dish. Pour the oatmeal mixture over the top.
- Sprinkle the remaining 1/3 berries with apples on top.
- Place in the oven and bake for 35 -40 minutes, until the oatmeal is set in the middle.
- Serve with more fresh berries, if desired, and enjoy!
