  • 5 lb (665 g.) lean ground beef (85% lean)
  • 1 large egg
  • 1 large (410 g.) eggplant, cut into 1-inch cubes
  • 1 large (150 g.) bell pepper, chopped
  • 1 large (170 g.) onion, chopped
  • 2 cloves (10 g.) garlic, minced
  • 1 cup (265 g.) tomato sauce
  • 1 tbsp. (5 g.) olive oil
  • 1 cup (240 ml.) chicken broth or water
  • 1 tsp. onion powder
  • 1 tsp. smoked paprika
  • ½ tsp. dried oregano
  • ½ tsp. dried thyme and basil
  • salt and ground black pepper, to taste

How to Make Meatballs in Eggplant and Bell Pepper Sauce

  2. In a large mixing bowl add the lean ground beef, egg, 1 tsp. onion powder, 1 tsp. smoked paprika, ½ tsp. dried oregano, salt, and pepper to taste. Mix together until combined.

  4. Bake for 12-15 minutes, then remove from the oven and set aside.
