For Donut Holes:
- 1 ¾ cup all-purpose flour
- 2 tsp. baking powder
- ¼ tsp. salt
- 2 cups dry curd cottage cheese or farmer’s cheese
- 1/2 cup plain Greek yogurt, 2%
- 2 medium eggs
- 1/3 cup erythritol of sweetener of choice
- 2 tsp. vanilla extract
For Donut Hole Coating:
- 3-4 Tbsp. melted butter
- 4 Tbsp. erythritol sugar of your choice
- 1 Tbsp. ground cinnamon
How to Make Healthy Air Fryer Donut Holes?
To Make Donut Holes:
- In a large bowl, combine the flour, baking powder, and, salt. Set aside.
- In another medium bowl, add the cottage cheese, Greek yogurt, eggs, erythritol, and vanilla extract. Using a hand blender or countertop blender mix all together until smooth.
- Add the wet ingredients to the dry ingredients and knead with your hand for 1 to 2-minutes until the dough is smooth. The dough could be sticky, but firm enough to roll into balls.
- Preheat air fryer to 320°F.
- Using a 1-Tbsp. measuring spoon, portion out the dough into the same pieces, and place them on a lightly floured work surface.
- Coat your palms with a small drop of melted butter and roll each dough piece into balls.
- Transfer the balls in a single layer in the air fryer. Air fry for about 8-10 minutes or until golden brown. Repeat the process with the remaining dough.
To Coat Donut Holes in Cinnamon Sugar Mixture:
- Combine the erythritol (or sugar) with ground cinnamon in a medium bowl.
- Brush the hot donut holes with melted butter and roll them in the cinnamon mixture. Serve and enjoy!
