- 1 cup (or 145g) whole wheat flour
- ½ cup (55g) vanilla or chocolate protein powder
- ¼ cup (or 25g) cocoa powder
- 1 tsp. baking powder
- ½ tsp. baking soda
- ¼ tsp. salt
- 2 large eggs
- 1 egg white (or 35g)
- ¾ cup (or 175g) plain Greek yogurt, 2%
- 3 Tbsp. (or 33g) unsalted butter, melted
- 3 Tbsp. (or 33g) erythritol of sweetener of choice
- 1 tsp. vanilla extract
- 1 cup (or 170g) sweet cherries (fresh or frozen), pitted and chopped
How to Make Chocolate Cherry Protein Muffins
- Preheat the oven to 330°F. Line a muffin tray with 8 parchment or silicone liners.
- In a medium bowl combine the flours, protein powder, cocoa powder, baking powder, baking soda, and salt.
- In another large bowl whisk together the eggs, egg white, Greek yogurt, melted butter, erythritol or sweetener, and vanilla.
- Add the dry ingredients to the wet ingredients and mix until well combined (don’t over mix)! Gently fold in the cherries.
- Spoon the batter into the lined muffin pans, filling about 3/4 full. Bake for 25-30 minutes or until a toothpick inserted into the middle of a muffin comes out clean.
