Ingredients for Healthy Pumpkin Tiramisu

  • 1 lb (or 450g) light ricotta cheese, (liquid squeezed)
  • 1 cup (or 225g) plain Greek yogurt, 2%
  • 1 cup (230g) canned pumpkin puree
  • 1/2 cup (or 100g) erythritol
  • 2 tsp. pumpkin pie seasonings
  • 1 cup (or 240 ml) brewed espresso or very strong coffee, (room temperature)
  • 12 giant or 18-24 regular (or 150g in total) ladyfingers (savoiardi biscuits)

How to Make Healthy Pumpkin Tiramisu

  1. In a large mixing bowl, place the ricotta cheese, Greek yogurt, pumpkin puree, erythritol, and pumpkin pie seasonings. Using a hand blender (countertop blender or electric mixer will also work), blend the cream mixture until smooth.Healthy Pumpkin Tiramisu – low calorie dessert recipe
  2. Break the ladyfingers into halves or thirds. Working one at a time, dip each ladyfinger piece in the coffee for a few seconds and place in the bottoms of 6 serving glasses.
