If you’re hosting a small crowd for Thanksgiving or Christmas dinner or just want delicious turkey dinner anytime, this Turkey Leg Roulade recipe is the perfect main for four.
This Turkey Leg recipe is quick and surprisingly easy to make with minimum prep time. This is a very simplified unstuffed turkey roulade so you don’t need to spend extra time in the kitchen making stuffing. Deboned turkey leg is rubbed with dry herbs and spices before being rolled up and roasted in the oven until cooked to perfection.
The Turkey Leg Roulade can be prepared in advance and refrigerated for up to 24 hours before roasting.
For this recipe, you will need to remove the bone from the turkey leg, but you can buy a whole boneless turkey leg or just ask your butcher to do the work for you. Usually, I like to cut up a whole turkey and separate the turkey legs from the breast. I use the dark meat to make this roulade and the breast – for the most incredible Roasted Turkey Breast. The carcass and leftovers go for a turkey bone broth or soup!

Ingredients for Turkey Leg Roulade
For Turkey Leg Roulade:
- 1 large (~2.5 – 3lb) deboned, skin-on turkey leg
- 2 Tbsp. (or 15g) olive oil
- 2 Tbsp. lemon juice
- 1 ½ tsp. garlic powder
- 1 ½ tsp. paprika
- 1 tsp. ground coriander seeds
- 1 tsp. Italian seasonings
- salt and black pepper, to taste (I used about 1 tsp. of salt and ¾ tsp. of pepper)
For Turkey Gravy:
- 1 cup (or 240 ml) turkey drippings from the pan (fat skimmed)
- 1 cup (or 240 ml) unsalted chicken or turkey broth
- 1 Tbsp. (10g) unsalted butter
- 1 Tbsp. (or 8g) cornstarch
How to Make Turkey Leg Roulade
To Make Turkey Leg Roulade:
- Preheat the oven to 375˚F.
- In a small bowl, combine the olive oil, lemon juice, garlic powder, paprika, ground coriander seeds, Italian seasonings, salt, and pepper to make a seasoning paste.
- Place the turkey leg, skin side down, on a cutting board. Spread the seasoning paste all over the turkey leg.
- Roll up the turkey leg tightly to form a roulade. Tie the roulade firmly with kitchen twine at 2-inch intervals.
- Transfer to a roasting pan or baking dish and roast for about 1 hour until the skin is golden brown and the internal temperature reaches 165˚F. Remove from the oven, cover with foil and allow it to rest for about 10 minutes while making the gravy.
To Make Turkey Gravy:
- Skim the fat off the top of the turkey drippings.
- In a medium saucepan, combine the turkey drippings, chicken or turkey broth, and butter. Bring it to a boil.
- In a small bowl, whisk 1 tbsp cornstarch with about 2 tbsp. cold water and pour it into the boiling broth, stirring slowly. Continue to simmer on low heat stirring frequently until the gravy has thickened, about 3 to 5 minutes.
- Taste and season with salt and black pepper if needed. Enjoy!
