This Summer Tomato Salad is a fresh and flavorful salad that couldn’t be any simpler to make. Sliced colorful heirloom tomatoes arranged with crunchy cucumbers on a baby spinach bed, drizzled with savory vinaigrette, plus a sprinkling of feta cheese create a really elegant dish. It’s a healthy meal option for all family and friends that is ready in only 10 minutes!
This Tomato Salad perfectly pairs with all kinds of grilled meats or fish, can be a delicious lunch idea or light side dish!
I love using heirloom tomatoes for this recipe because they always have the fresh tomato flavor, sweet taste, and unique shape. They’re pretty juicy and ‘meaty’ which contributes to the dressing of this salad. Adding sliced cucumbers is essential if you want to give this salad some crunch.
For the greens, choose what you like or have on hand. I’ve tried this salad with chopped lettuce, baby spinach, arugula, mixed greens, and everything worked well.
Garnish the salad with crumbled feta cheese for richness and saltiness and add sliced red onions to complete flavors.

Ingredients for Tomato Salad
For the salad:
- 3 cups (or 50-60g) baby spinach
- 1 ½ lb (2 large) heirloom tomatoes (or other ripe tomatoes), sliced
- 2-3 baby cucumbers or 1 thin English cucumber, sliced
- ½ red onion, sliced thinly
- 4 Tbsp. (or 32g) crumbled feta
- fresh herbs of your choice, for garnish (optional)
For the salad dressing:
- 2 Tbsp. extra-virgin olive oil
- 1 Tbsp. red wine vinegar
- 1 tsp. honey mustard
- 1/4 tsp. garlic powder
- Salt and pepper, to taste
How to Make Tomato Salad
- In a small jar add the olive oil, red wine vinegar, honey mustard, garlic powder, salt, and pepper. Put a lid on and shake well to combine.
- Place baby spinach in a serving dish. Arrange tomatoes and cucumbers over the spinach.
- Sprinkle with the onion slices, drizzle with dressing, and top with crumbled feta and fresh herbs if desired.
- Serve immediately and enjoy!
