Ingredients for Chicken in Banana Coconut Curry Sauce

  • 8 medium (835 g) chicken drumsticks
  • 1 tbsp. (7 g) olive oil
  • 1 medium (115 g) ripe banana
  • 1 can (14 ounces) light coconut milk
  • 1 ½ tsp. curry powder
  • ½ tsp. ground coriander
  • 1 ½ tsp. smocked paprika
  • 2 cloves garlic, minced
  • 1 lime (juice only)

How to Make Chicken in Banana Coconut Curry Sauce

  1. Preheat the oven to 375°F.
  2. Place the banana and coconut milk in a blender and puree until smooth. Add curry powder, ground coriander, paprika, lime juice, salt, and pepper and mix all together. Set aside.Chicken in Banana Coconut Curry Sauce – flavorful and easy dinner
  3. Brush a large skillet with some olive oil and heat over medium-high heat. Once hot, add the chicken drumsticks and cook about 2-3 minutes per side, or until crispy-golden.Chicken in Banana Coconut Curry Sauce – flavorful and easy dinner
  4. Transfer the chicken to a medium baking dish.
