Lower Calorie Boston Cream Crepe Cake (High Protein Dessert)
Want a dessert that feels fancy but won’t wreck your goals? This lower calorie Boston cream crepe cake has thin, tender crepes layered with silky custard cream and topped with a glossy chocolate glaze. At about 220 calories and 12 g of protein per slice, it’s a healthy, high protein dessert that’s easier than it looks.

Why You’ll Love This Recipe
I love desserts like this one: light, but still satisfying. This cake gives me that classic Boston cream flavor, and it keeps me full thanks to the protein. It’s the kind of dessert I can enjoy without overthinking it.
- High protein, lower calorie. Egg whites, Greek yogurt, and milk do the heavy lifting, so you get about 10 g of protein per slice and a dessert that actually keeps you full.
- Tastes like the real thing. Think classic Boston cream pie, just lighter.
- Easy to make ahead. It needs to chill anyway, so it’s perfect for meal prep or entertaining.
- No fancy skills needed. If you can flip a pancake, you can make crepes.
- Naturally lower in sugar. Sweetened with erythritol or stevia, with just a little dark chocolate on top.

Ingredients for Boston Cream Crepe Cake
For the custard cream
- egg yolks: for richness and that classic custard color
- erythritol or stevia: sweetens without the sugar
- vanilla paste: big vanilla flavor
- milk: the creamy base
- cornstarch: thickens the custard
- Greek yogurt: adds protein
- light cream cheese: makes it extra smooth and thick
For the crepes
- egg whites: lean protein, keeps the crepes light
- eggs: for structure
- milk: makes a thin, easy-to-pour batter
- all-purpose flour: the base
- salt: balances the flavor
- light oil: keeps the crepes tender
For the chocolate glaze
- dark chocolate: for a rich flavor
- milk: thins the chocolate into a pourable glaze

Substitutions
- Sweetener: Any 1:1 granulated sweetener that measures like sugar works. If you use regular sugar, the cake will no longer be lower in sugar, but it’ll taste great.
- Milk: Unsweetened almond or oat milk works in both the custard and the crepes. Dairy milk gives the creamiest custard.
- Flour: Swap half the all-purpose flour for whole wheat or use this Healthy Crepes recipe for extra fiber.
- Greek yogurt: Use skyr or a thick dairy-free yogurt if you prefer.
- Cream cheese: a dairy-free cream cheese works.
- Chocolate: Sugar-free dark chocolate keeps the glaze even lighter.
- Vanilla paste: Pure vanilla extract is fine. Use the same amount.
How to Make Lower Calorie Boston Cream Crepe Cake
- Make the custard cream first. In a medium bowl, whisk the egg yolks, sweetener, vanilla paste, and cornstarch until smooth. In a saucepan, warm the milk over medium heat until it’s hot but not boiling.

- Temper the yolks. Slowly pour about half of the hot milk into the yolk mixture while whisking, then pour everything back into the saucepan with the remaining milk. Cook 1 to 2 more minutes, whisking constantly, until it’s thick like pudding.
- Cool the custard. Transfer the hot custard to a clean medium bowl. Press plastic wrap directly onto the surface so no skin forms, and let it cool completely.

- Finish the cream. In another bowl, whisk the Greek yogurt and light cream cheese until smooth. Gradually mix it into the cooled custard until creamy. Chill while you make the crepes.
- Make the crepes. Use the same method as in my High Protein Crêpes. Add the egg whites, eggs, milk, flour, and salt to a blender in that order and blend until smooth, then add the oil and mix briefly. Heat a non-stick skillet over medium heat and brush it lightly with oil. Pour about ¼ cup of batter into the pan, swirl quickly into a thin layer, and cook about 30 seconds until the edges lift. Flip and cook another 10 to 15 seconds. Repeat, brushing the pan with oil as needed, and stack the crepes on a plate. Let them cool completely.

- Assemble the cake. Place one crepe on a plate or cake stand. Spread a thin, even layer of custard cream on top, then add another crepe. Repeat until you run out of crepes or cream, finishing with a crepe on top.
- Chill. Cover and refrigerate for at least 3 to 4 hours (overnight is even better) so the cake sets and slices cleanly.

- Make the chocolate glaze after the cake has cooled. Warm the milk until steaming, pour it over the chopped dark chocolate, and let it sit for a minute. Stir until glossy and smooth. Let it cool for a few minutes so it’s pourable but not runny, then pour it over the chilled cake and let it drip down the sides.
- Slice and serve. Chill 15 more minutes to set the glaze, then slice with a sharp knife.
Tips for Best Results
- Preheat your pan. It keeps the crepes from sticking and tearing.
- Keep the pan lightly oiled. A quick brush between crepes is enough.
- Cool everything before assembling. Warm crepes or warm custard will make the layers slide and the cream melt.
- Use a sharp, warm knife. Wipe it clean between slices for neat edges.

FAQ
Is this Boston cream crepe cake really high protein? Yes, compared to a traditional version. The egg whites, eggs, milk, and Greek yogurt all add protein, which makes it a satisfying high protein dessert.
Can I make it ahead? Absolutely. Assemble it a day ahead and add the glaze the day you serve it, or glaze it and keep it chilled until serving.
How long does it keep? Store covered in the fridge for up to 3 days.
Can I freeze it? I don’t recommend freezing the assembled cake because the custard can get watery. You can freeze the plain crepes, separated with parchment, for up to 2 months.
Can I use regular sugar? Yes, in the same amount, but it won’t be lower in sugar anymore.
